Restaurant Vandelvira
Juan Carlos García natural de Baeza, a graduate in Culinary Arts and Gastronomical Sciences by the Basque Culinary Center, returned to his city in 2020 after years of formation and gastronomic experiences in Tokyo, Barcelona and Ibiza.
It reopens Vandelvira with a moving concept. It was his parents who were in charge of spreading love to the kitchen.
Vandelvira is one of the most famous restaurants in Baeza, whose gastronomy is based on extra virgin olive oil. It is placed in the ancient convent of San Francisco, of the 16th century, occupying the cloister (ideal for, for example, weddings, celebrations and meetings) and the upper floor of this (where the dining room is placed).
To access the dining room, the solemn staircase is located at the bottom of the cloister. Everything is decorated with 16th century antiquities (furniture, paintings, lamps, etc.).
Its gastronomy is of high cuisine, in which the great protagonists are the products of the earth with a careful preparation, and of course, olive oil.
The variety of dishes is wide, highlighting delicacies such as the pate of perdiz, the cod to the baezana, the carpaccio with soya shoots, the flan of AOVE, the peppers of the stuffed piquillo...
