The Barbería is located in one of the main arteries of the historic town of Baeza, which was declared a World Heritage Site by UNESCO on July 3, 2003. Located in a unique environment just a few metres from the old University (now converted into a high school) and a privileged point on the Conde Romanones street, which links the Plaza del Populo with the Palace of Jabalfifth, is undoubtedly the area with the most tourist transit in the city.
The establishment gives life to an old palaciega house that stores a spectacular canteen of the late 18th century perfectly preserved and of full utility, open to the public during the autumn and winter months as an extension of the restaurant and / or event room.
The facilities now occupied by the restaurant were for decades the official headquarters of the Flemish Peña, where many performances and different cultural events are held throughout the years.
At the beginning of 2016 the Peña Flamenca decided to change its seat to a new place owned by the Town Hall, when four young friends of Baeza decided to shape their dream with the opening of this establishment.
In addition to a spectacular canteen, La Barbería has a top floor with a large living room and a nice air-conditioned interior terrace, which opens to the public all year round as an extension of the restaurant and is adjacent to the rear walls of the International University of Andalusia (UNIA).
La Barbería is a timeless and disangry establishment where people of all ages converge in a cozy and carefully decorated environment. In this busy place you can taste different dishes of local cuisine, fusion kitchen options and dishes cooked in the olive wood barbecue.
The gastronomic offer includes dishes suitable for vegetarians and vegans, exquisite homemade desserts and a careful selection of wines, beers from the world (from tap or bottle with more than 50 references), liquors or vermut among which are those made on earth. In the preparation of the tapas, a multitude of typical jienian products of a artisan nature are used, such as fries, sausages, pates, ochyos, scolds, piquitos, etc.
As for the celebration of events La Barbería has been consolidated as a popular reference establishment during the celebration of the "Day Fair" in Baeza, in the first half of August. During the rest of the year, you can often enjoy some wine or beer tasting, flamenco show, gastronomic day, musical performance or a good party threatened by Dj's.
The head of the kitchen, Alejandro Bohórquez Barrera (Baeza, 1978), was formed as a cook at the Hacienda La Laguna de Baeza (Jaén) Hotel School during the 2012 / 2013 and 2013 / 2014 courses.
He shared his learning period with practices in:
- Restaurant "El Corral del Indianu" (Arrionda / Asturias). (1 Michelin Star).
- Restaurant "La Campana" in the Hacienda La Laguna (Baeza / Jaén).
During his training period he was granted the Leonardo Scholarship, which offers him the opportunity to continue training at the "Café Paris" Restaurant (Hamburg / Germany).
After the completion of its training phase, it distributes its work path during the years 2015 and 2016 among the kitchens of various establishments in the province of Jaén, beginning in mid-June 2016 its project in La barbería, where it is committed to a mix of avant-garde and tradition and to the use of jiennese products.
In February 2021, he was awarded the "Best Chef" of the year 2020 by the Diputación de Jaén, being recognized as one of the most important values of provincial cuisine.
