Martos is located to the north of the Sierra Sur region, being the largest municipality and population of this region. There are other populations that are part of the municipality, such as Monte Lope Álvarez, Las Casillas, La Carrasca and Villarbajo.

Its municipal term is essentially olive tree, in its landscape of countryside the olive tree is the protagonist, extending to the horizon. Because of the great quantity and quality of olive oil produced in the city, it is called the "Olivar Cot." Around it has developed an important olive industry that together with the automotive-related factories and their auxiliary industries are the engine of employment and wealth for the municipality and its region.

It has an important historical heritage, among other monuments we quote: the Old Cárcel and Cabildo, Castles of the Peña and the Villa, Puente Romano, Urban Wall, Castle of the Endowment, Pilar of the New Source; with respect to the religious architecture: Royal Parish Church of Santa Marta, Sanctuary of Mary Most Holy of the Villa, Monastery of the Most Holy Trinity, Ermita of San Bartolomé, parish of San Amador and Santa Ana, etc.

This is the cultural wealth and beauty of its historical ensemble, which since 2003 has had the status of Good Cultural Interest.

Old Jail and Cabildo. Building built in the 16th century, considered a masterpiece of Spanish mannerism. It is currently the City Hall of the city.

In his spectacular main façade We can highlight the huge, dogrous columns with piled armchairs, the sculptures of Justice and Prudence, (both were beheaded), the great doors and their bronze aldabones and a great shield of the Austrians crowning the whole. It was declared a National Historical Monument in 1931. Below the City Hall, the Convent of the Trinitarian, work of the late 16th century, and on the same street, but in the opposite sense the Hospital of San Juan de Dios, of baroque bill of the 18th century. All this high part of the intramurous historical centre is of great quaint and from it you can enjoy beautiful panoramic.

  • Santa Marta Parish Church. It rose in the 13th century, in the years following the taking of the city by Fernando III the Holy, on an Arab mosque. It is consecrated to the patron of the city and has the title of Real since 1617. Gothic Mudejar style. The Baptisterium, the Major Chapel, was later built and embellished with the slate-cross vaults and a large cover of the isabelin Gothic. In the 16th century the interior is expanded and remodeled, raising large columns of Tuscan order and building the original Bell Tower with three bodies.
  • Pilar of the New Source. Ornamental source located in the Manuel Carrasco Municipal Park. It was built in the 16th century, reflecting the most new and outstanding aspects of the Manier architecture. The set stands out for its monumental beauty and austerity. It consists of an abrevadero pillar and a smaller one in which two lions make water pipes. In the center is the Austrian shield, and on the sides is the shield of Martos and that of Governor Aboz Enríquez.
  • The hermitage of San Bartolomé. Located in the skirts of the Peña de Martos, dates from the 14th century and houses the venerated image of Mary Most Holy of the Victory, Queen and Lady of the Peña.
  • Roman Bridge of Martos. Important engineering work, built in the Roman era on the Salado stream in the vicinity of Martos to facilitate the passage between the two shores.
  • Sanctuary of Mary Most Holy of the Villa. Temple in which Mary Most Holy of the Villa, known as "La Labradora," is sold. It was built on dates near the delivery of Martos to the Kingdom of Castilla. In the 16th century the temple was remodeled and a bell tower was built. This sanctuary was burned and destroyed during the Spanish Civil War. The current was rebuilt in the 1940s of the last century, in a Neobaroque style. The Torre-Campanario dates from the 16th century, is separated from the main building and is the only original element of the ancient Sanctuary. It has a square floor with half-point arches.
  • The ruins of Castillo de la Peña which we know today are not those built by Muslims but correspond to the strength that the Calatravos built from 1340. The floor of the castle is trapezoidal adapted to the surface of the plateau on which it sits and its entrance, for security reasons, marked a zigzag drawing. The compound was divided into alcázar and a courtyard of weapons protected by a walled enclosure. The alcázar, where the tower of tribute is raised, takes advantage of a natural podium that lifts it about three meters above the courtyard of weapons, separated by a wide, also natural.

  • Castle of the Villa. It was an alcazaba or citadel surrounded by canvases of almenada wall, as well as passageways and towers, leaving the central space for the construction of administrative and religious buildings: church of Santa Catalina, headquarters of the governorate, cavalries, tahonas, lagores, aljibes, etc. According to evidence from an inspection carried out by the Visitors of the Order of Calatrava in the 16th century in order to repair the deficiencies of the Lower Fortress.

Naturaleza

The orography of the municipal term of Martos is characterized by being quite accidental, with plenty of mountain grounds above all the southern part, instead the north-western part corresponds to soft reliefs and plain characteristic of the Guadalquivir depression, which extends in the west and north of Martos.

Among the greatest levels are the Sierra de la Caracola, with 1340 m., located in the south and to the north is located the Sierra de La Grana with 1254 m. and this is the extension of the Sierra de Jabalcuz, and we would like to mention the well-known Peña de Martos with its 1003 m. on whose slopes the city of Martos is located.

The hydrographic network is composed of a set of rivers and streams which are used for both human consumption and irrigation.

They are two rivers the main ones that pass through the municipality: Eliche Riverwhich is born by the saw of the Grana, and the river Víboras which is born in the term of Valdepeñas de Jaén. The channel of this river is used in the a reservoir of the same name, next to the pastry of Las Casillas.

The flora of the term is dominated by the olive, located in a large percentage of the land of the municipality. It also exists indigenous vegetation of the Mediterranean forest in the mountain areas, where we see species such as: the oak, coscoja, white jara, complaining and abundant number of aromatic plants such as lavender, rosemary or thyme.

In the banks of the river Víboras coexist riverside species as they can be: white, strawberry, elves, olms, zarzamoras and carrizos.

In the fauna exists a great diversity of species, from rapacious birds, both diurnal and nocturnal; aquatic birds, paseriforms, reptiles, amphibians and minor-game mammals.

For nature lovers, Martos offers an interesting natural offer to make different routes, climb to the top of the Peña, offers unparalleled views of the countryside landscape and the surrounding mountains.

Other very interesting routes are also the rise to the Sierra de la Grana, the Sierra de la Caracolera and the setting that forms the reservoir of the Víboras River and the Víboras Castle.

Fiestas y Eventos

Among the main festive celebrations of Martos are:

  • Romeria in honor of the Virgin of Victory. The last weekend of May is held. The festivities begin on Friday with the departure of the procession of the image from the hermitage of San Bartolomé to the Church of Santa Marta with the streets where it passes adorned with flags, reunions, retamas, altars and rosemary in typical suits. The next day the Virgin leaves the parish to go to the hermitage of the Virgin of Peña followed by carts, chariots and horsemen. On Sunday, the day of the rosemary, the virgin returns to her hermitage carried on a cart thrown by oxen and accompanied by gilded carrots with floral ornaments and various decorations. During the tour the atmosphere is fun and cheerful. They sing songs, they eat cheese, ham and rebujito. Once in the Peña, the solemn mass is celebrated and at the end of the rosemary they prepare to eat in the surroundings of the hermitage. This party is declared the Festival of Tourist Interest of Andalusia.
  • Fair and parties in honor of San Bartolomé. At the end of August, Martos is preparing for the largest celebration. Many and many different activities are organized during the days of pre-fair and fair, such as concerts, theatre, cultural and sports activities, horseback riding, pasacalles and taurinos (traditional the brandy torillo). In the gastronomy of Martos, extra virgin olive oil is a fundamental ingredient.

Historia

The origins of Martos they go back to Prehistory. Its strategic location, the existence of springs and the natural defense it offered were factors that caused the human settlement in the area.

There is evidence of different lytic materials belonging to the Paleolithic, however, the oldest documented statements are from the Neolithic. Remains of this period have been found in "El Molinillo," "Huertas Viejas" and "La Alberquilla." They are underground housing, funeral and defensive structures.

The city is known from very old, the Iberians named it Tucci and an important Iberian oppidum located in the upper part of the Peña is cited in the works of Ptolemy. There will be many settlements around Martos, such as Castlejo de Belda, La Atalaya, El Alamillo...

The Iberian city of Tucci, being occupied by the Romans, it became a colony that was named after Augusta Gemella Tuccitana. Many remains of this time are preserved such as mosaics, coins, ceramics, weapons, marble portraits..., the most important being the collection of Roman tombstones exposed on the façade of the Casa Consistorial de Martos.

From the visigode period, the paleocristian sarcophagus which is preserved in the Provincial Museum is the most important archaeological piece appeared in the town.

In the year 711 The Visigodic monarchy on the Iberian peninsula ends with the arrival of Muslims. Since the 9th century it was a very disputed border city. From this time are the castle of the Peña, the walls and torreons of the castle of the Villa. Municipality located to the northwest of the province of Jaén, in the region of the Jienese countryside. It's the most western urban core of the province, limiting to the west with villages of Córdoba.

Geographically it is characterized by a soft orography, typical of the olive countryside. Its economy is based on agriculture, being the cultivation of olive trees the most prominent, although there are others like cotton, sunflower, sugar beet, corn... that are sown in the vegas of the Salado stream. There are still some reductions of white grape and cereal vineyard, which were important at the time. It has a long wine tradition, but at present there are very few hectares of wine planted.

Its economy is complemented by the wood furniture industry, the service sector and construction, among other activities.

The river Guadalquivir crosses the municipal term in the north and its tributary Salado stream that runs from north to south with low flow rate.

Among its rich heritage is the Castle of Lopera, the parish church of the Immaculate Conception, the Casa de la Tercia, the City Hall and the hermites of Jesus El Nazarene, the Humilladero Christ and San Roque.

Of the ancient artisan trades in Lopera, only two activities related to the ebanistía have been maintained to this day: the silery and the tortería. In both cases work is done following a classic Spanish line, of Renaissance air and close to the furniture that characterized Granada in the first half of the 20th century. Among the different wood used are those of beech and chestnut.

Other craft works, carried out today only by hobby, are reluctant to disappear. This is the case of the "guarines," made with olive pods, which were used to transport water pitchers or agricultural utensils to the loins of the beasts; or the anea works, especially those made for the "asses" of the traditional chairs.

In the Plaza Mayor of Lopera we find the three factual powers: the military power, represented by the castle-fortress of the Order of Calatrava; the religious power, represented by the Church of the Immaculate Conception and the civil power, represented by the City Council.

  • The Castle of Lopera. The castle is located in the centre of this town. It was built by the Order of Calatrava, to whom this population was given after its conquest in 1242. It has irregular pentagonal plant, defending its corners with cylindrical and prismatic towers or cubes. The interior of the fortress has a large courtyard of weapons, with a magnificent almost rectangular alcazar in the center formed by two towers joined by two wall canvases that form a large aspired adarve, supported by half-point arches on counterstrengths. The tower of San Miguel, which controls the main door, houses two vaulted rooms, one of which later became a curious palomar as witnessed by the dozens of ceramic cubes that cover its walls. The tower of Santa María is rectangular, with two overlapping rooms. The one on the ground floor was completely remodeled in 1535 after the works undertaken by the Comandador D. Juan Pacheco for the construction of an oratory, a small chapel that completed the significant transformation carried out in the castle to make it a nobility residence. These works also affected the skate between the two towers, transformed into the palace yard. The Lopera Castle belongs to the promotional database and has complete information sheet.
  • The tower of Santa Maria or of the Tribute, keeps in its interior remains of a Gothic chapel, made in the 16th century, when the castle became a nobility residence. We can now enjoy a centre of interpretation dedicated to the Order of Calatrava.
  • Our Lady of the Immaculate Conception. The date of its construction is not exactly known, some historians place the beginning of its construction at the beginning of the 14th century. There is a clear succession of styles ranging from the Gothic, the Order of Calatrava, to the Baroque. The basic plant is divided in three ships, highlighting the centre as being wider and higher than the sides. These ships are separated by cylindrical pillars that support the vaults of the deck, warheads and multiple nerves. The altarpiece It's neoclassical. On its outside stands the tower with a square base on which rests an octagonal body and a circular third, with four moons and half-point arches for the bells. Finishing with a pointed polygonal needle chapitel with glazed tile.
  • Casa de la Tercia. It was the old posite that is currently called "Casa de la Tercia." The building that was to be built in the 16th century is made of brick in its thick interior and thick tapial in its external walls, with quarry stones that reinforce the corners of the building. It has no decorative elements except two crosses at the top of the deck horse. It was used to store grain in the Modern Age and as a winery in the Contemporary. Don Miguel de Cervantes passed by in order to raise funds for the Invincible Navy.
  • The hermitage. It has several and very interesting hermitage, among which we highlight: The Hermitage of the Christ of the Humiliaderoof the 18th century and of Baroque style; the Hermitage of San Roqueof the 16th century, also baroque; Hermitage of Jesus Nazarene, where the 18th century cover is again baroque.
Naturaleza

Lopera, located in the area called the lower countryside and the Andújar valley, is the westernmost core of the Jienian municipalities. The Guadalquivir River crosses its municipal border on the north side, while the Salado stream, tributary to the east, serpents from south to north, forming fertile vegas.

The orography is soft, with wavy hills, the typical olive countryside, which has other irrigation crops located in the lower vegas of the Salado stream, such as cotton, sunflower, corn or sugar beet.

The vegetation, with a clear predominance of the olive tree, presents next to the channels of the rivers what we call the gallery forest: willows, strawberries, tarais, mimberas, white chopos and black alms.

The fauna is composed, among others, by Rape: a brine eagle, black millano, close it; carnivores: fox, rabbit, hare, weasel, chickpea, gineta, badger; reptiles: the lizard, snakes, and the fauna own of the riverside forests: the imperial garza, the martinete, or the aquilucho lagoon.

Lopera, due to its soft orography, is an ideal place to travel in direct contact with nature. Among the areas of the area we highlight the New Pilar site.

A short mile from the village of Lopera, along the way of the Spinillas, is the location of the New Pilar, true environmental lung of this area. The site has a pilar-abrevadero dating from 1875, and a meadow populated with trees and chaired by the hermitage of the farmers' pattern, San Isidro Labrador. No doubt an ideal place to spend a day in the field.

Fiestas y Eventos

Throughout the year, many and many different parties are held in Lopera.

  • La Candelariais celebrated since the 17th century on the night of February 1 around the typical "candelas" of olive thrones, which each group of neighbors organizes in their neighborhood. Next to these fires there will be games, songs and dances.
  • Romeria of the Virgin of the Head. On the penultimate Sunday of April, the image comes in procession through the streets of the town. The following weekend the rosemary moves to the Cerro del Cabezo (Andújar) to participate there in the Romeria de la Virgen de la Cabeza.
  • Romeria de San Isidro. On the 15th of May, in the place called "Pilar Nuevo," where the hermitage of the saint is located, this deep-rooted feast of farmers is celebrated. The image is processed, and behind it are the carts and chained cavalry, a show of color, songs and joy.
  • The Mayans. They are a kind of wooden frame, which is supported on a few sides and is covered with colored paper, ribbons, flowers... and decorated with wind thighs. In the center of the frame are two or more floors, and in them are placed biscuit cakes. It is used to honor someone, child or older, on their birthday or onomastic... The May is taken to the house of the honorado and along the way songs are sung. After the procession all together taste the rosses and sweets.
  • Tunas de Lopera competition, is one of the most expected events of Lopera's neighbours. The last weekend of July is held. There are young and not so young tunes from many parts of the world. It's all those days it's all joy, good humor, round songs... Tradition that has been transmitted from generation to generation.
  • Corpus Christi, for the celebration of this day's procession, Lopera's neighbors adorn their streets with pots, small altars, flags, flowers and junks that adorn the ground. The children who have made communion that year participate, and when it ends, they are in charge of collecting the jungle from the ground and preparing small whips.
  • Celebrations in honor of San Roque. The saint was named patron of Lopera in 1644. The parties are held between August 14 and 16, the day 16 being the big day. Start this day with a major Diana, in charge of the Band of Tambores and Corneto. In the parish the religious feast is celebrated in honor of the patron and there is the blessing of bread threads that will be distributed among the devotees. But the most striking thing is that children light up San Roque with lights made from watermelons and melons that have previously been emptied.
  • Feria de los Cristos. Fiesta Mayor, Fiesta Real or Feria Grande are appeals that mention the same celebration: the Feria de los Cristos which, after having undergone several changes of date and by popular referendum, takes place during the last Sunday of August. In Lopera, there are two crucified Christos that are venerated: that of the Vera Cross or the Great Christ and that of the Humiliadero or the Chico Christ; qualifications that refer to the size of the sizes of the Divinity. On Sunday, the image of the Great Christ is processed, first in receiving worship and whose fellowship dates back to the 16th century; the next day, there is the raging of the Chico Christ: the shooting of saved ones made at dawn by the cofrades. The religious feast is closed on Tuesday with the procession of the image of the Christ of the Humiliadero accompanied by his soldadesque that was founded in the 18th century. In the festivities of this town, known for its canned wine, they stand out: the race of the Galgos (tradition lost and recovered today), the leagues of two vaguels each day tasting their flesh on the last day of the feast on the Paseo de Colón and the animation of the Municipal Caseta with a verbena is extended until the early hours of the morning.
  • Medieval fair, which has been held over the last few years in the Castle, within the program of the route of the Castles and the Battle.
Gastronomía

The gastronomy of Lopera follows the common denominator of the villages of the region, uses virgin olive oil on all its dishes, in addition to the products obtained on its land, whether they are vegetables, fruits or game meat.

Among its most traditional dishes, we highlight:

  • "Pelao wheat", to different vegetables of the orchard like tomato, onion, garlic... are added bowels, clams and wheat grains. The wheat, you have to put it in water, peel it and let it cook for about 20 minutes, before bringing it together to the rest of the ingredients.
  • Chickpeas, to which cod and spinach are added.
  • Bread. The chopped parsley is added garlic, egg and grated bread that are milled and make balls that are then fried.
  • Trout to the mill. The trout must be put in milk for a few hours and then removed, rinsed and fried.
  • Maimons. Milk, sugar and pieces of bread will be the basic ingredients of this dish.
  • Pest in Doraillo, previously a saffrito of vegetables is made, to which must be added the chopped perdiz.

From the pastry shop a dish with much roots in Lopera:

  • CordialAlmonds, water and sugar should be added to egg whites.
Historia

The first data go back to the Bronze Age by the remains found in some cortijos. From the Iberian era there are several deposits in the municipal term, the Cerro de San Cristóbal one of the most important of Alta Andalucía.

There are remains of the Roman era in various areas of the municipality. His name was "Polesi." Many of the Roman settlements remained occupied in the Visigodic era. The most studied site is that of the Roman-Visigoda city of the "Morrones" which had a Visigoda basilica.

The current population core would probably emerge around the X and XI centuries in a small house that gradually consolidated the population. In 1240, Fernando III the Holy, conquered Lopera to the Muslims and from then until the 16th century it was under the jurisdiction of the Order of Calatrava.

It has a Museum dedicated to the civil war in the tower of San Miguel, and there is also a monument to the International Brigadists in the Old Pilar.

La Iruela, a small and beautiful town located in the north-east of the Sierra de Cazorla region. In its western part there are the cultivated lands, the rest of the municipal term is a mountain area reforested with pine trees. It belongs to the Natural Park of the Sierras de Cazorla and Las Villas, being its main entrance door.

The municipality of La Iruela, as if it were a puzzle, is composed of numerous cores, 17 pedanias are the ones that make it up. Burunchel, El Palomar, El Burrueco, Arroyo Frio, Fontanares, La Estrella, Mortalejos, Tramaya, El Pocico, San Martín, Pasada Barrero, Los Tísanas, Arroyos de Plaza, Juntas de Muriel, Nubla, Cortijo Enroque and Cañamares.

The economic activity of the municipality rests on two basic pillars: olive cultivation and nature tourism, also highlighting forest activity.
Among its historical heritage we quote the medieval castle, the ruins of the church of Saint Domingo de Silos and the conistory house.

The Iruela has been declared Artistic Historical Set in 1985.

  • La Iruela Castle. The imposing castle rises on an abrupt rock and at its feet a medieval district of unquestionable architectural value is spread. It is of mothade origin and is built on pre-Berber foundations. In the eighth century, La Iruela was occupied by Muslims, who in order to cultivate the land created alqueras, then walls to defend themselves from the enemies and, already in the twelfth century, the first fortress of the three that it currently presents. The second, also the work of the Almohades, was a courtyard of weapons surrounded by a series of defensive torreons united with each other by thick wall canvas. Inside the courtyard of arms are the remains of a large aljibe. When Fernando III conquers this area, Christians reform the castle and build the tower of tribute in the highest part of the rock. An auditorium with artistic and cultural activities has been created between the castle and the rock. It was declared a Historical Monument in 1985.
  • Ruins of the church of Saint Sunday. 16th century Renaissance Church, raised inside the walled castle enclosure. The church was composed of three ships, the largest central and where the presbytery was to be found, the sides had chapels. A building attached to the church would be the old tower-door of Muslim origin that would give entrance to the interior of the Almohad fortress and that Christians reused as a bell tower. During the French invasion, La Iruela suffered attacks and fires, in one of them (1810) the building was severely damaged. Some of its noble areas are still standing today.
  • Consistory house. It is a Mudejar-style monument that in its day was posited and grain storage. It dates back to the late 15th century. He was looted and burned in the War of Independence. In the mid-19th century it was set up as the municipality of La Iruela. A remodeling made at the end of the last century gave him the present look.

Naturaleza

The Iruela is in the skirts of the saw of Cazorla, crowning the Guadalquivir valley. It is located 932 m above sea level, which means it is the highest municipality in the entire region, and the one that has the most portion of the Natural Park of the Sierras de Cazorla, Segura and Las Villas.

If something characterizes the area is the variety in the landscapes and ecosystems, with altitudes ranging from 2,100 m in the Cabilla saw to 360 m in the vicinity of the Cerrada bridge.

The region is characterized by landscapes where the high peaks are mixed with deep ravines, soft reliefs and large valleys, forests, olive groves and high mountain pastures, orchards, humid, dry and arid areas. The altitude rises from the west to the east, but not continuously, but forming saw teeth, whose rising and incoming with progressively more pronounced, alternating river courses and summit lines.

The traditional useof these lands has been of pastures for livestock, forestry, small areas of traditional crops (olive, cereal, orchard), hunting, fishing, collection of mushrooms, wild fruits of the forest and spartum and wicker for the varied popular crafts, mainly.

These traditional uses have given way to new economic activities, mainly service companies, especially tourism, in the area of the Natural Park. Today La Iruela has a large tourist infrastructure that, together with those of the cities of Ubeda and Baeza, are the most important in the province of Jaén.

At present the olive tree has been displacing the other crops, the loins are occupied by a sea of olive trees interrupted, sometimes, by orchards, all framed in the surrounding saws. In the drier and driest areas the almonds spatter in white spring.

A space with many ecosystems in which infinity of species that make up rich and varied fauna:: from the rapacious birds, the carrionies, the cynetic species, both of major and minor hunting, the fish, amphibians, reptiles, as well as the characteristic fauna of the riverside vegetation that exists next to the stream and river.

Without a doubt, a true natural paradise to recreate. It is almost compulsory to make direct contact with one of the wonderful places that this territory hides, where in addition to observing "in situ" both vegetation and fauna, we can enjoy a fabulous panoramic view of the mountains and the jienese countryside.
Most of the land in La Iruela belongs to Mount Público Guadahornillos, with just over 6,740 hectares.

In the municipality of La Iruela, the following public equipment is highlighted:

Fiestas y Eventos

We began the festive cycle of La Iruela in January:

  • Saint Anton, January 17. It is tradition to light fires and bless animals so that Saint Anthony Abad will protect them throughout the year.
  • San Blason February 3. The traditional doughnuts are distributed and a joint raffle is made with the products that the neighbors have donated. A few days before the celebration of the party, the image is brought from its Nubla hermitage. During the procession, the saint is the reason for many offerings in thanks to the favors received.
  • Celebrations in honor of the Virgin of the Unprotected and Holy Silos Sunday. They are held in the last days of August. There are many and varied activities that are carried out: fireworks, barter championships, serrano bolus, domino tournaments, local garden and gastronomy products competition, children's theatre, pasacalles, recitals and verbenas. The Virgin is brought from her hermitage to the parish, where she will remain until the fall, when she will return to her.
  • Saint Martin and the Virgin of the Rosary. Romeria that is celebrated the first weekend of October since time immemorial. In the pedania of San Martín
  • Party in honor of the Assumption of the Virgin Mary. It is celebrated between the 13th and the 15th of August and takes place in the pedanias of Arroyo Frio and El Palmar.
  • Celebrations in honor of the Immaculate Conception and Saint Julian. From 22 to 25 August, it is held in the pedanía of Burunchel. The saint is transferred from the hermitage of Saint Julian to Burunchel, where it is processed.
Gastronomía

It shares its gastronomy with the region where it is located. In general, peas are made from land products. Among the most characteristic are the following:

  • Gachamita, which is made from olive oil, flour, water and potatoes. You can eat with chorizos, torreznos...
  • Farmed flour, which are made with hard pasta.
  • Tallarines. It consists of a stew of meat, vegetables and mushrooms in which wafers of mass are cooked that are broken.
  • Rin-Ran. It has red pepper, onion, potatoes, cod, black olives and olive oil.
  • Serrano eggs. They are usually served in saucepan with pork products, such as chorizo, scratched bacon and meat from game animals.
  • Other: In Easter the dishes made with cod and Fried artichokes.

Warehouse:

  • Lis flowers. They are made of a very liquid mass of flour and passed through the frying pan in hot iron mold.
  • Fried milk and sugar roses.

Historia

The first signs of human presence in the Iruela environment date from the Copper Age, with great occupation until the Bronze Age. Then there was a depopulation of the area for which the researchers have no explanation, since after time we attended a proliferation of settlements. One of them is that of Nubla, with remains of fortification and that was active from the Iberians to the medieval era, the same happening in the times of the Romans, the bridge of the Mill that crosses the Cañamares River is attributed to this period.

It has been said that the Carthaginians founded the city, that it was popular in Roman times, and that the Arabs destroyed it and then populated and rebuilt it.

During the Islamic period it must have been one of the villages that populated the region. Around the 11th century this population was walled and the top of the promontory served as a refuge.

In the time of King Fernando III and thanks to the troops of the Archbishop of Toledo, conquer the castle and the rest of the municipality. In thanks the king gives him the jurisdiction of these lands within the advance of Cazorla. By the end of the 13th century, in order to strengthen the Alfoz of Cazorla, they donate to him La Iruela as a village, but La Iruela did not want to accept this privilege given to Cazorla.

He sometimes got the privilege of a villa, but for very short spaces of time.
Francisco de los Cobos, Secretary of Charles I, got the monarch to give him the villa to the detriment of the archbishop of Toledo, who pleaded until in 1606 he recovered it again. In this short period of time, the Cobos, large mecenas on the lands of their lordship, ordered to build the church of Saint Sunday of Silos in the interior of the castle.

The archbishops of Toledo always maintained the possession of this villa until 1811, when the Cortes of Cadiz abolished the territorial jurisdiction of the archbishop of Toledo. The spiritual jurisdiction over these lands reaches 1958, when it passed to Jaén.

La Carolina is a city at the foot of Sierra Morena and the Caraway, natural mountain port that links Castilla with Andalusia.

Its area is made up of extensive olive trees, but also the dehesas and the half-mountain areas populated by oak and pine trees. It is easy to find abandoned mine chimneys, clear signs of their past related to this activity.

It was the capital of the New People of Sierra Morena, a political project by the enlightened king, Charles III, in 1767. The main objective was to colonize and take advantage of the lands of Sierra Morena and to provide security to the mountain port, as it was a very unsafe place, where bandits and malefactors were camping. The population is made of settlers who came from central Europe, France and Germany mainly. A close collaborator of King Charles III, Pablo de Olavide, would be appointed responsible for the project, with the title of Superintendent of the New Populations of Sierra Morena.

The municipality of La Carolina is composed of five population centres: La Carolina, as main, Navas de Tolosa, La Fernandina, la Isabela and the Guindo. It is surrounded by natural areas such as the nearby Natural Park of Despeñacolos, the Fernandina reservoir or the small urban nucleus of the Guindo, which evokes its mining past.

In its artistic heritage are: The Palace of the Intendente Olavide, in Baroque style; the parish church of the Immaculate Conception, the seat of the ancient Carmelite foundation of San Juan de la Cruz, the Torrecillas del Molino de Viento and the Torres de la Aduana.

  • The municipal term of La Carolina is full of archaeological vestiges from Prehistory. Places like La Calera, El Minado or El Ochavo, so they testify. We met with Rupéstre art fields like Dona Lady, the Puntal or the Guindo. And also former mining holdings, mainly Roman, like Fountain Spis, or El Guindo.
  • The Church of the Immaculate Conception, built as a church of the convent of the barefoot Carmelites of the Peñuela, after the Colonization it is extended to serve as a parish to the nascent population. It has undergone several reforms over the years, and in 1899 the tower was built.
  • Palacio del Intendente Olavide, which was the residence of Mr Pedro Olavide, executive of the Sierra Morena Repopulation project. It was built in 1775, in neoclassical style and is located in the center of the village, right next to the parish church.

  • The Customs Towers, neoclassical style and airy architecture flank the main entrance to the city coming from Madrid.
  • Castillo de Navas de Tolosa: For more than two hundred years, it served as a defense and vigilance for the Muslim kingdom of what we know today as the passage of Despeñacolos, once Paso del Muradal. Today the silhouette of its tower stands out in a typical Sierra Morena dehesa in which you can also see braves.

Naturaleza

Its enclave at the foot of Sierra Morena and at the limits of the Natural Park of Despeñacolos, makes La Carolina a municipality especially attractive to nature lovers. The visitor has the opportunity to enjoy a landscape full of contrasts, with steep mountains and wide dehesas, on which it is easy to see majestic birds.

The cultivated land represents only 10% of its extent, mostly dedicated to olive trees. The main agricultural activities are the cultivation of olive trees, livestock and hunting, greater and lesser. It also highlights its mining landscape, heritage of an industry that supported the life of the Carolinians: remains of abandoned mines, lavatories, remains of smelters...

The vegetation is very abundant and heterogeneous: olive, oak, cork, chestnut, eucalyptus, alms and oaks. The fauna, both in larger game animals (boar, goose, cords, reels...) and smaller (rabbits, hares, parrots, quail) is very abundant. There are also cattle of wild cattle, sheep and goats.

Part of the term La Carolina covers the mountains of Sierra Morena to the north, while towards the south the landscape becomes adhesitated, thus offering beautiful and contrasting landscapes. Fiestas y Eventos

In addition to the Christmas and Carnival celebrations, the most rooted celebrations in the town are as follows:

  • Festivals of the Foundationthey are held from 3 to 5 July, in an attempt to link present and past from La Carolina, to value in a fun way its history, traditions and origin. The acts include the reading of the court and the tribute to the Colonoan act to claim the persons who still keep foreign surnames.

Historia

In the 18th century, the enlightened king Carlos III and its ministers (Aranda, Jovellanos and Campomans) decide to create the New Populations in Sierra Morena. At the head of the repopulation he put the Superintendent Pedro Olavidewho would be responsible for the settlement of settlers from France, Germany, the Netherlands and Switzerland.

In 1767, the The strength of the New Populationsestablishing the regulations and rules governing these new settlements, different from those of the rest of the country. This year, and near La Peñuela, a former Carmelite convent, La Carolina is founded, which would be the capital of all the new settlements in Sierra Morena.

The beautiful city of La Carolina is the best example of the city of Enlightenment. It is known as the City Jewel of the Holy Kingdom. This was designed as a Roman camp; that is, following two axes that are crossed, one from N to S, which is called cardo and another called decumano, from E to O that in the City Hall square is where they are, indicating this crossing the city center, according to the design of Simon Desnaux, supervised by Olavide. In the mid-19th century, La Carolina began the exploitation of its rich Argentine lead filons. But the mining crisis meant the closure of all the mines in the 1970s. Thus today, the buildings linked to this activity have become part of the landscape as witnesses to its industrial past, being inscribed in the catalogue of the Institute of Historical Heritage of Andalusia.

For a few decades, La Carolina has been in the industrialization sector and is now a city full of future.

Jaén is an extensive municipality located in the south-west centre of the province, and in which the capital is located.

Jaén's architecture bears witness to the many civilisations that have inhabited the city and its surroundings throughout the centuries, resulting in an outstanding monumental heritage that includes both religious and civil buildings. Its historical and artistic legacy showcases a variety of architectural styles, including Gothic, Mudéjar, Renaissance, Baroque, and Neoclassical.

Among its most important monuments are the following:

  • Cathedral of the Assumption of the Virgin, a masterpiece by one of the greatest Renaissance architects, Andrés de Vandelvira, and the inspiration for the construction of many cathedrals throughout Latin America. It is regarded as one of the finest examples of Renaissance architecture in Andalusia, which is why the process to obtain UNESCO World Heritage status for the cathedral began several years ago. The city's first cathedral was built on the foundations of the former Great Mosque following the conquest of Jaén by King Ferdinand III of Castile, known as Saint Ferdinand, in 1246. Later, during the 14th century, Bishop Nicolás de Biedma brought to the city the relic of the Holy Face (Santa Faz or Santo Rostro), believed to be one of the three cloths that, according to Christian tradition, Saint Veronica used to wipe the sweat and blood from Jesus' face on his way to Calvary. The presence of this relic in the first Christian cathedral transformed it into an important pilgrimage destination, making its expansion necessary in the Gothic style. Elements of this Gothic phase can still be seen in the apse of the present cathedral. Due to structural problems that arose during the 14th century, a new Renaissance cathedral was commissioned from the architect Andrés de Vandelvira. Although construction continued for nearly three centuries, Vandelvira's original design remained largely faithful throughout the project, resulting in what is considered the most architecturally balanced, harmonious, and proportionate cathedral in Andalusia, with one of the most solemn and majestic interiors in the region.
  • Basilica of Saint Ildefonsus. After the Cathedral, it is the largest church in the city. The earliest records of the original building date back to 1248, when it was established as a chapel serving the Cathedral. Two centuries later, in 1430, it became the setting for the famous miracle of the descent of the Virgin Mary to the city of Jaén. Following this event, it became a sanctuary dedicated to the image of the Virgin housed inside, under the title of Our Lady of the Chapel. In the 16th century, the Virgin of the Chapel was proclaimed the patron saint of Jaén. Finally, in 2010, Pope Benedict XVI granted the church the status of Minor Basilica. The building features three entrances: the oldest, in Gothic style, is located at the rear of the church. The side entrance, in Renaissance style, displays a relief depicting the Chasuble Bestowal upon Saint Ildefonsus. The last to be built was the Neoclassical main façade, crowned by a statue of the saint to whom the basilica is dedicated.
  • Santa Catalina Castle. An ancient Caliphal fortress stood on the summit of Santa Catalina Hill as early as the 9th century. Centuries later, following the conquest of the city by King Ferdinand III in 1246, the Christian castle that survives today was built. During the 19th century, the castle underwent several modifications to strengthen its defensive structures in response to the Napoleonic invasion. Close to the castle, the building that now houses the National Parador was constructed in the 1960s. From the summit there are spectacular panoramic views of the city and its surroundings, especially from the Cross Viewpoint. The fortress also houses an Interpretation Centre that explores the history of the castle.
  • The Arab Baths. They are the largest and best-preserved Arab baths in Spain. Built in the 11th century during the reign of Abd al-Rahman II, they are located beneath the Villardompardo Palace in the heart of the city's historic centre. Covering an area of 450 square metres, they still preserve Almohad decorative elements, suggesting that they were restored towards the end of the 12th century. Between the 14th and 15th centuries, after they ceased functioning as public baths, the rooms were converted into tanneries. Later, at the end of the 16th century, Fernando de Torres y Portugal, Count of Villardompardo and Viceroy of Peru, built his palace above them. At the beginning of the 20th century, together with several adjoining buildings, they became part of a women's hospice. A section of the baths was rediscovered in 1913 and, a few years later, they were declared a National Monument. Today, following a restoration project that received the Europa Nostra Award, they form part of the "Arab Baths" Cultural Centre, which also houses the Museum of Popular Arts and Customs and the International Museum of Naïve Art.
  • Chapel of Jesús (Camarín de Jesús). The chapel and the convent church of Saint Joseph are the only surviving remains of the former Convent of Saint Joseph of the Discalced Carmelites, founded in the 16th century. The recently restored church, with its characteristic Carmelite façade featuring a niche, houses both the chapel and the Camarín de Jesús, created in the 17th century to enshrine the celebrated Renaissance sculpture of Nuestro Padre Jesús Nazareno ("El Abuelo"). The image belongs to the brotherhood founded in this very convent in 1588 and is carried in procession during the early hours of Good Friday before thousands of worshippers and pilgrims. The façade is adorned with a beautiful terracotta sculpture of Saint Joseph by the renowned ceramic artist Paco Tito.
  • Church of La Magdalena. Originally the city's Great Mosque during the Islamic period, it was converted into a parish church following the Christian conquest. Its main façade and interior are Gothic in style, while one of its towers still preserves the former Arab minaret. The church contains several important works of art, including Calvary by Jacobo Florentino "El Indaco", a panel of Our Lady of the Pillar attributed to Pedro Machuca, the 16th-century Christ of Clemency by Salvador de Cuéllar, and the 18th-century image of Saint Mary Magdalene by Mateo de Medina. The courtyard of the former mosque, with its rectangular ablution pool, served various public purposes during the Christian era and was landscaped with gardens and ornamental fish during the 20th century.
  • Church of Saint Bartholomew. It is one of the oldest churches still standing in the province of Jaén. Dating back to the medieval period, this religious monument features a Baroque exterior and a Mudéjar interior. Among its highlights is a green glazed ceramic baptismal font decorated with 15th-century Gothic inscriptions.
  • Provincial Council Palace. This palace was built in the mid-19th century by architect Jorge Porrua. Originally, the site was occupied by the Convent of Saint Francis, commissioned by King Ferdinand III in the 13th century. A century later, King Peter I of Castile ("Peter the Cruel") granted it to the Franciscan friars. Following the ecclesiastical confiscations, the building became public property and was eventually converted into the headquarters of the Provincial Council. Today, visitors can explore its central courtyard and the lower galleries.
  • Oppidum of Puente Tablas. The fortified Iberian settlement of Puente Tablas is located just 4 kilometres from Jaén. Over more than thirty years of archaeological research, the site has revealed its outstanding historical importance through evidence of continuous human occupation from the Bronze Age to the Islamic period. However, its most significant phase dates from the Iberian period, particularly the 4th century BC. Visitors can discover how the Iberians of the Upper Guadalquivir lived while exploring one of the most impressive defensive systems of the period, with more than 300 metres of preserved walls standing over 5 metres high. Visitors can enter the settlement by following the same route once used by its ancient inhabitants, passing through the famous Sun Gate.
Naturaleza

Half of the municipality of Jaén lies within the Baetic Mountain Range. This impressive landscape can best be appreciated from Santa Catalina Castle, an exceptional viewpoint overlooking both the city and the surrounding countryside.

To the south stretch rugged mountains and rocky peaks, forming the peri-urban parks of Santa Catalina and Monte La Sierra, where visitors can enjoy a wide variety of hiking trails and mountain routes just a short distance from the city centre.

To the north lies the fertile countryside, with gently rolling hills covered by centuries-old olive groves. Further afield, the landscape gradually gives way to pine forests, terebinths and holm oaks, announcing the arrival of the mountains.
Activities such as hiking, cycling, rock climbing and via ferrata are all within easy reach for both residents and visitors, only minutes from the city centre.

Fiestas y Eventos

The Bonfires and the San Antón International Urban Night Race, declared a Festival of National Tourist Interest, is held on the weekend closest to 17 January. More than 12,000 runners enjoy a unique atmosphere along the route, with music, flaming torches and enthusiastic crowds cheering them on. Afterwards, bonfires are lit in neighbourhoods and squares throughout the city. Around these fires, people gather to sing, dance and enjoy the traditional "melenchones", while sharing local cured meats, regional wines and rosetas (popcorn), creating a warm and festive atmosphere where unforgettable moments are shared.

Carnival. Carnival celebrations in Jaén have a history spanning more than 700 years. For over a month, comparsas, chirigotas and other carnival groups parade through the streets to the Darymelia Theatre, where they perform humorous, satirical and socially critical songs as part of the competition organised by the City Council. Local groups and individuals also take part in the fancy-dress competition, delighting spectators during the colourful parade through the city centre.

Holy Week in Jaén is a religious, cultural and tourist event of outstanding importance. Its brotherhoods and confraternities preserve a legacy dating back to the 16th century, renowned for the beauty and artistic quality of their religious sculptures. Holy Week has been declared both a Festival of National Tourist Interest and of Andalusian Tourist Interest. Twenty-one brotherhoods take part in the processions from Palm Sunday to Easter Sunday, with one of the most moving moments taking place during the early hours of Good Friday, when El Abuelo is carried through the streets.

The International Olive Oil and Related Industries Fair (Expoliva), held every two years at Jaén's Exhibition and Conference Centre, is recognised as one of the world's leading events in the olive oil sector. Over four days, it brings together farmers, machinery manufacturers, transport companies, olive oil producers from around the world, scientific symposiums and conferences, making Jaén the international capital of the olive-growing and olive oil industry.

San Lucas Fair. This fair originated in the 14th century through a privilege granted to the city by King Henry IV of Castile. Originally held in August to coincide with the harvest season, it was moved to October during the 19th century to coincide with a livestock fair. From 12 to 18 October, the city hosts numerous events including bullfights, concerts and theatre performances. At the Alfonso Sánchez Fairground, visitors can enjoy open festival tents serving traditional cuisine, live music, dancing and fairground attractions, as well as the traditional tents at the "La Vestida" fairground.
Music plays an important role in the city's cultural life. Jaén hosts the Autumn Festival, the prestigious Jaén International Piano Competition, Oleosónica, Jaén Sounds Like Opera, the Bolero and Latin American Music Festival, many other music festivals throughout the year, and the internationally recognised Jaén International Jazz Festival: "Jazz Among the Olive Trees".

Other Festivals and Events:

The Bonfires of Saint Anthony, held on 17 January. Amid singing and dancing, the traditional "melenchones" are performed while people share laughter, conversations and "rosetas" (popcorn). This festival has been declared a Festival of National Tourist Interest.

May Crosses Festival. A tradition in which local residents decorate crosses beside churches, in squares and other iconic places throughout the city. Both locals and visitors tour the crosses, enjoying the festive atmosphere, gastronomy and community spirit that surrounds them. Children also take centre stage on Friday afternoon, parading through the city centre with small floats decorated with crosses, Christs and Virgins of their devotion. They are dressed in traditional mantillas and accompanied by civil, religious and military representatives, delighting everyone who watches the procession.

Corpus Christi.

Festival in Honour of the Virgin of the Chapel, co-patron saint of the city. These festivities take place in the popular San Ildefonso district, combining religious devotion to the patron saint with celebrations in Jaén's best-known gastronomic quarter, where bars and restaurants extend their terraces into the streets to offer their finest dishes. The City Council also organises a wide programme of cultural and tourist activities throughout the festival. Every 11 June, the Lola Torres Choirs and Folk Dance Association holds a floral offering to the Virgin. Participants parade dressed in the traditional pastira costume (for women) and chirri costume (for men), joined by many other residents of Jaén. The celebration concludes with the performance of the traditional Bolero de Jaén before the Virgin's image. In the afternoon, the Virgin is carried in procession through the city centre to the cathedral.

25 November – Saint Catherine's Day. The feast day of Jaén's co-patron saint is celebrated on Santa Catalina Hill. After the procession climbs to the castle, a religious service is held inside. Afterwards, visitors enjoy food from the stalls and bars set up around the castle, where grilled sardines, barbecued meats, patatas a lo pobre and paella are among the traditional dishes served in a wonderful atmosphere of celebration and togetherness.

From the beginning of December, the city enjoys a wonderful Christmas atmosphere with the switching on of the festive lights and the start of an extensive programme of activities, including concerts, street music and theatre for all ages. The popular central street, Calle Carrera, is beautifully decorated and welcomes everyone who wishes to share moments of joy and celebration with the people of Jaén.

Gastronomía

Jaén's gastronomy is varied and is based on the Mediterranean diet, in which extra virgin olive oil gives dishes their distinctive aroma and flavour.

Among the city's most traditional dishes are:

  • Pipirrana, made with finely chopped ripe tomatoes and dressed with a mixture of extra virgin olive oil, green pepper, garlic, egg and salt. It is often topped with grated boiled egg and, optionally, tuna.
  • Homemade partridge pâté.
  • Migas with traditional accompaniments.
  • Scrambled eggs with broad beans and Iberian ham.
  • Broad beans, campion greens or spinach with pine nuts, showcasing the quality of Jaén's vegetable gardens.
  • Roast kid goat, chicken, young goat or lamb.
  • Trout from the rivers of Jaén.

Among the desserts, we should mention gachas dulces (sweet porridge), fried milk, and, of course, the traditional pastries made in the local convents (the Bernardas, Santa Clara and the Carmelite nuns).

If you would like to enjoy a unique culinary experience, the San Ildefonso district is home to two Michelin-starred restaurants: "Bagá" and "Dama Juana".

Historia

The human presence in the present city is seen from the calcolitic stage, also called the Copper Age, when there were several villages scattered around the area. In the surroundings of the city, rock paintings and remains of megalithic architecture have been found.

Jaén is a city that houses a large number of legends very imbricated in the soul of its people. Maybe the most famous of them is the "Maline lizard"or"Jaén lizard. "The influence is such that it has become one of the symbols of the city, being present in its architecture, rides and concerts. It is based on the existence of a dragon (lizard) that had the population afraid and that with ingenious tactics its inhabitants managed to get rid of it.

Nice town located in the Sierra de Segura, fully included within the Parque Natural de las Sierras de Cazorla, Segura and Las Villas. Next to the reservoir of the Tranco de Beas and the valley of the Guadalquivir River at its beginning.

The municipality of Hornos belongs to several villages spread throughout the municipality: Cañada Morales, La Capellanía, El Carrascal, Fuente de la Higuera, Guadabraz, Hornos El Viejo, El Majal, La Plantera, El Tovar, El Tranco and La Venta. Some of them are located in places of great beauty, such as La Plantera or La Capellanía, and others are more active thanks to their situation, such as Cañada Morales or El Tranco. The rest with a marked agricultural character, where peace and tranquility are assured, are currently developing interesting quality tourist infrastructure such as rural houses.

Furnaces are essentially forest, the pinars occupy about 80% of their municipal term.

The urban core is surprised to be located on a large peñasco. Its medieval character gives it a special charm. It has been declared an Artistic Historical Set in 1985.
Its economy is based on tourism, forest use and olive cultivation. Without forgetting the very important activities and fishing.

It has a rich heritage: the Castle, the Church of Our Lady of the Assumption, the Castle of Bujaraiza, the Puerta de la Villa, the Mirador del Aguilón and the Tower of Bujarcaiz.

Castle. Hornos was granted by Fernando III the Holy, after his conquest in 1239 to the Order of Santiago. The time at which the castle would be built, probably on an earlier Muslim fortress from which the aljibe is preserved.

Of a purely defensive nature, the trapezoidal shape set is built with small masonry. It is made up of a magnificent Tribute Tower, three slender torreons square floor and the outer wall of a room that closed the courtyard of arms.

The Tower of Tribute in square shape and rounded corners, something common in the constructions of the Order of Santiago, has only one entrance at half height.

In its interior two overlapping rooms supported by vaults and communicated by a staircase carved in thick wall.

By the end of the 20th century, the rehabilitation of the castle that was very damaged began. After many attempts, in 2011 the works of their total restoration were completed. It has been declared Good of Cultural Interest in 1985.

Located inside the castle you can visit one of the most important tourist resources of the area as is the Cosmolarium.It is a centre for the dissemination of astronomy that consists of a digital planetarium, with a dome of 8 meters in diameter that shows enveloping audiovisual productions, complete exhibition rooms on the Universe, spaces for workshops and educational games, as well as a terrace for astronomical observations.

Parish Church of the Assumption. Data from the first half of the 16th century. Its construction follows the style of the Order of Santiago. Of a square floor, with one ship and side chapels, it is divided into three square sections separated by fajon arches.

The decks are gothic, the 16-century renaissance-style altarpiece as it is recorded. The cover is one of the first plateresque in the province of Jaén, although it is currently damaged by time.

The tower stands out for the gargobles of the cornice and the Gothic crest of the mast. We can say it's a magnificent example between Gothic and Renaissance.

In it was found the ornamental vessel in the form of a Nazi-style amphora, with motifs glazed in blue and gold on white enamelled background that is preserved in the National Archaeological Museum.

The Villa Gate. It's a door on the wall dating back to the 11th century. It is built in elbow to make access to the enemy difficult, which makes you think of a mothade origin. Made of masonry and red brick in the vaults, as well as a small window of the facade. Declared Good of Cultural Interest in 1985.

Bujaraiza Castle. It rises on a the island in the waters of the Tranco reservoir. It is a small fortress formed by a walled polygonal enclosure and a tower of tribute. It is built with small-size masonry yarn, with lime mortar. Declared Good of Cultural Interest in 1985.

Tower of Bujarcaiz. It is currently submerged under the waters of the Tranco reservoir. It was part of the surveillance system of the Hornos castle. It is a square floor construction and a troncoconic form.

Aguilon Viewer. Located next to the City Hall shows one of the best views of the Natural Park and an impressive view of the waters of the Tranco reservoir.

Naturaleza

The municipal term of Hornos is located in the heart of the Sierra de Segura, and by it they run the waters of the high courses of the Segura and Guadalquivir rivers, it takes its waters to the Tranco reservoir.

The water is present in much of its term and makes that nature is overflowingboth in the arid High summits villages of larive pine trees and high-rise tiles, as in the lower areas where the black pines grow, whose wood is very resistant to rot, oaks, oaks, moans and chopos.

Here we find more than thirty endemic species that cover the steep surfaces of the rocks, such as aromatic plants or the curious trapping.

The variety of ecosystems also makes the number of animal species living in these areas very diverse. In the higher and more steep areas live the large-game, muflon, deer, go and boar species; Rapes and scavengers like, eagles, broken bones and lethargy vultures. And in the less high areas, the cynetic species of minor hunting: badgers, foxes, hares, rabbits or gines. Without forgetting the fauna that lives in the crystalline waters of these rivers: trout, barbs, otters, salamanders. No the birds who either live in olive trees, or feed on their fruits in their migratory movements: carboneros, abbullas, jilgueros, petriroreds, ratoneros...

The municipal term of Hornos will present us with thousands of routes to discover and that it will surely leave a deep footprint on us when you go through them.

We point out three places that we should not miss:

  • The Tranco Pantano. It is an inner sea between pine trees, given the abundant vegetation surrounding it and the olive sea that goes down to the banks of the reservoir. The main and regulator of the Guadalquivir River. The village of Tranco had chapel, schools, event hall, sound cinema, post office and civil guard headquarters. Dolorosa was the disappearance under the waters of the Lordship of San Miguel de Bujaraiza, loaded with history and whose castle still stands out challenging above the waters, when the swamp is at its highest level. From time to time, in El Tranco water sports have proliferated. Hinojares is a small town located to the south-east of the province of Jaén, extends its landscape in the region of Alto Guadalquivir, south of the Natural Park of the Sierras de Cazorla, Segura and Las Villas, and much of its municipal term belongs to the Park. It is limited to the terms of Quesada, Pozo Alcón and Bone.

Hinojares is accessed by the autonomous road A-315 Torreperogil-Baza, diverting on the stretch between Huesa and Pozo Alcón, on the road JA-8200.

The municipality has the pastry of Cuenca, where the river Turrilla is born.

It is now one of the least populated Jienian municipalities, only four hundred, of which one quarter are foreigners who have bought the damaged houses, reformed them and established their residence in the municipality.

In his artistic heritage we highlight:

  • Church of San Marcos Evangelista. Built in the late 17th century, it is the most remarkable building in Hinojares. It is an austere construction that stands out by the rotunity of its volume, marked by the white of its walls, with few and reduced voids, whether circular or rectangular and a side access door with no ornamentation. It completes a bell tower, simulating a swordsman, placed on the wall that links the header with the rest of the temple body, closing the strip that borders the only ship. Inside it is adapted to the shape of a Latin cross and has a Renaissance altarpiece and a baptismal pile of white marble to which the parishioners have in great esteem.
  • City Council. It is the same line of architectural austerity, and without concessions to decoration and aesthetics. It has three heights and intoned holes, the most outstanding is that of the balcony on the first floor, in vertical line with the access door and crowned by a small attic with a watch that imitates that of the municipalities colonized in the 18th century, although it is not located in the center, but on one of the sides of the building and on which a small bell is installed.
  • Urban helmet. Urbanistically this municipality has not been configured with prior planning. It is a set of traditional houses whitened and covered in two waters with Arab tiles, with small verticalized holes to avoid the rigors of winter and adapted to the simple habits of the inhabitants dedicated to the tasks of hunting, pastures and agricultural, and in more peripheral positions, houses with floor structures, with a maximum of four heights and roofed to four waters. Of great ethnic value are the "casas- caves"which have become a defining element par excellence in the people of Hinojares. Built without having to take the hands of architects, the forms and volumes depend to a large extent on the characteristics of the rock in which they have been excavated and on the originality and needs of the building. The caves, located on the slopes of the hills, in the canyons and in the rails, with an anarchic distribution, with their curved lines, lime, vaulted ceilings and chimneys, make up an interesting set of uniqueness. Its architectural originality, its temperature (18 ° C to 20 ° C, so no bedding is necessary) and its welcoming, intimate and rustic environment have made them a very appreciated habitat.

Naturaleza

Hinojares is the gateway to a world full of contrasts and beauty, diverse and rich, an example of human and natural coexistence for millennia.

The Guadiana Minor and Turrillas rivers, with its short but fruitful vegas and the sharp and cut orography, cause a natural corridor which links the Alto del Guadalquivir with the Mediterranean coast, and are essential elements that explain the location, situation and morphology of the population nuclei of the Nagorno-Chinese territory, as well as the way of life of its neighbours.

The municipal term of Hinojares is an authentic maze of valleys, calares, slices, mountains and streams that convert water in the real protagonist of these places.

To better understand the physiognomy of this territory, nothing better than to approach one of the following places to admire nature and let us captive:

  • The birth of the river Turrillas. It is the natural element that is most conclusive in the vertebration of the term of Hinojares. To this end we move to the village of Basin, a very preserved and peculiar small village, belonging to Hinojares and within the Natural Park of the Sierras de Cazorla, Segura and Las Villas. Historia

In order to know the Prehistory and Ancient History of Hinojares, we must refer to the Castles of Ceal, one of the most important Iberian settlements in the province of Jaén.

The origin of this settlement is in the control of the commercial route who from Levante introduced Greek manufactured products into the Guadalquivir Valley. It is located in a spur, with a circular plateau, where the remains of walls and housing buildings are abundant.

The study of the Iberian phase of necropolis with rich joules in which Greek weapons and ceramics appear, points to the presence in the village of powerful aristocratic characters.

The first phase of the occupation of this settlement went to the end of the 7th and 6th century BC; later abandoned until it was built the Iberian village in the 4th century BC and that lasted until the Roman Republican stage.

The origin of the present Hinojares is uncertain, as it is not cited in the medieval documents of the conquest of the Sierra Quesada- Cazorla. However, in its term there are villages and cortijos whose names do appear in the chronicles of the Spanish conquest. In this period there was a transfer of the population from the mountain to the valley. One of these examples is Cuenca, which was converted into the village of Quesada in 1257.

Hinojares must have been a plateau or a new foundation in the valley after the Spanish conquest of these lands. Until 1648 it depended on Quesada. And from this date it will become a village of Well, Alcon.

In the year 1690 got the title of villa and thus the independence of well of Alcon.

Municipality located in the central part of the northern region, next to the motorway of Andalusia. In its term it abounds the uncultivated area, consisting of dehesas of pastures with oak, Mediterranean bushes and forest species of repopulation. Its origin dates back to the 18th century, the result of the colonizing policy carried out by Charles III in Sierra Morena.

The peculiarity of its name comes from the location chosen for its creation: the old Sale of Guadalroman.

It is well known the handmade pastry shop of Guarroman, especially its hillbillies.
Among its historical heritage are the Parish Church of the Immaculate Conception of the late 18th century and the Posite of Labradores, built in 1789, both raised in the architectural style of the New Populations.

Main monuments:

  • Church of the Immaculate Conception. It was the first parish built in the New Populations. Its simple-drawn facade is built of red sandstone. It has a small cover with a half-point arch and three small gaps at half-height and a colonial-style swordsman. The size of the Virgin of the Jienese sculptor Jacinto Higueras (father), as well as the main altar that was brought from Ubeda, must be highlighted.

Historia

Guarroman was founded as part of the Sierra Morena colonization project that contemplated the Population Force of 1767, promulgated by Charles III.

It was Pablo Olavide who founded it with the name Muzquia, in the place that occupied the Sale of Guadalroman. Its first settlers were mostly German settlers. In the first documents of the foundation it is called Real Population of the Site of Guarroman. The name is believed to be the result of the castellanization of Arabic Uadi-r-Romman (river or stream of the pomegranates), which evolved phonetically to Guadalroman and later to Guarroman, now known as Tamujoso.

But those farmers would not be the only ones to give life to this land or to this people. Almost a century later, in 1861, under the protection of the resurgence of the lead and silver mines of Sierra Morena, they began to reach Guarroman miners from Almería, mainly, and from the lower Alpujarra of Granada, which together with the descendants of the German settlers ended up setting up the one that is today Guarroman.

Cazorla is a municipality located to the east of the province of Jaén, declared a historical-artistic complex and within the Natural Park of the Sierras de Cazorla, Segura and Las Villas, the largest protected space in Spain, the second in Europe and declared a Biosphere Reserve by Unesco since 1983.

It is the main urban enclave in these serranies. Its urban centre is located in the shadow of the Hawks' rock, with the saw behind its back and an immense sea of olive trees towards the sunset.
On the whole, the majestic castle of the Yedra stands out, from which you can see fantastic panoramic views of the urban warp of white houses, narrow and steep streets, with traditional houses and master houses, and a large number of monuments of outstanding artistic interest.

The waters of its slopes are collected by the River Cerezuelo, tributary of the Guadalquivir. A place where nature is expressed in its greatest splendor.

Cazorla, at the gates of the Natural Park of the Sierras de Cazorla, Segura and Las Villas, is a lesson of how man and nature have forged an alliance that comes to this day. Its rich cultural heritage includes places that cannot be lost.

The castle of the Yedra, whose origins could be Muslims, perhaps from the Almohad era (12th century), although throughout the 13th, 14th and 15th centuries Christians finished giving it their definitive configuration, which explains that in many of their inner stays the Gothic style predominate. The tower of tribute houses the Museum of People's Arts and Costumbres of Alto Guadalquivir. It is a place where you can learn more about how the ancestors lived on these lands.

From its enclave, 831 meters above sea level, it is seen the town of Cazorla and its surroundings.

The ruins of the church of Santa Mariaa sample of the Andalusian Renaissance. It is very likely that its author was Andrés de Vandelvira, as many of its elements can be recognized in the temples of its author located in Ubeda.

It is built on the Cerezuelo River, which was forced to channel previously, and which enters a large visitable vault under the main altar, across the whole church, to follow its course under the square of Santa Maria. It is very likely that the church was never fully completed and that the serious damage caused by the terrible storm and flood of 1694 would further make it difficult to complete it. It is the only church built on the bed of a river.

The City of Cazorla currently houses the Municipal Office of Information and Tourism and the Multipurpose Spacewhere concerts and shows are held.

Naturaleza

The location of Cazorla in the middle of the saw, whose historic town seems to be spilled on the rock of the Hawks, certainly makes it one of the most beautiful Jienian peoples. And the best way to discover the wonders of nature in this area is to realize one of the paths that, duly signified, exist in the environment. These include the following:

  • The Castle of the Five Skins Path.
  • Circular path of the Cerezuelo River.
  • Path of the Stairway.
  • The birth of the Guadalquivir River.

Walking these paths will be the ideal way to contemplate the maze of valleys, calares, slices, mountains and river basins, as well as the large number of rivers and streams that go along the slopes. In these walks, we will also discover the variety of Mediterranean botany of this place: pine, juniper, oak and other endemic species. Among the fauna are rapacious birds and mammals such as the rabbit, hare, deer, foxes and boars. A unique opportunity to discover the many ecosystems that exist in this environment.

Fiestas y Eventos

The Holy Week is of unique importance in this town of Cazorla. During the days of this week they process several steps in each of the days and have been carved by well-known imagers.

The Romeria de la Virgen de la Cabeza, which takes place on the last Sunday of April, has a deep-rooted devotion among the neighbors. In preparation for the rosemary, on the Sunday of April before the rosemary, a parade of lambs decorated with colored ties is held to be offered to the Virgin and will be auctioned in the following days.

From the City Hall, numerous cultural and sports events are organized and promoted, including the following: Blues Cazorla Festival, International Theatre Festival, Festivals of the advance of Cazorla, Nocino de la Tragantía (a local theatrical association), Marathon BTT Sierra de Cazorla.

Gastronomía

The gastronomy of the 26 municipalities that form this Natural Park of the Sierras de Cazorla, Segura and Las Villas is influenced by both Andalusian and Castile La Mancha cuisine.

The raw materials they use are game meat, river fishing, vegetables and vegetables from their own harvest. That's right, all of it properly decorated with the oil of their olive groves.

Among the most typical dishes, we will mention the following:

  • The gachfriend, crumbs of flour, water, oil, dried and fried peppers, chorizo and, depending on the time of year, melon, cherries, grapes...
  • Ajoflour: flour, garlic, peppers, potatoes, tomatoes, pepper, water and salt.
  • Thalarines or rhinestones: fine flour mass cakes with hare or rabbit.
  • The rhin-ran.: a good entrance at any table. The traditional serrano bread is attached in a purée of pyrrrrrama or gypsy salad: made of onion, pepper, tomato, garlic, cumins, extra virgin oil, vinegar and salt.
  • The serrana trout, trout in almond sauce or trout with truffle.
  • Grape bread: an outstanding dessert made with dried figs and mixed with nuts, minced almonds and a chorrit of anis.
Historia

Around 2000 BC, on the ancient terraces of the Cerezuelo River, the first inhabitants are established.

During the romanization, the Romans settle in this region and exploit the wealth of silver and salt that existed in the area. It will be during the Muslim occupation that Cazorla, like its neighbouring localities, will be fortified by the construction of castles.

In this way the Lord of Cazorla in the Middle Ages will become a major border enclave. This shows the number of castles and fortresses that delineate the advance, created in 1231.

The Christian conquest of these territories was carried out by Mr Rodrigo Ximénez de Rada, Archbishop of Toledo, in 1235. It will be King Ferdinand III who gives in feud to the archbishopric of Toledo these territories under the name of the advance of Cazorla.

The lordship will continue until the abolition of the Lordships in the early 19th century, although in this time space there are jurisdictional conflicts between the inhabitants and the diocese of Toledo.

The Cortes de Cadiz gave him the title of City in 1813 for his participation in the War of Independence.

A town located to the north-east of the province, between Sierra Morena and the Sierra de Segura, with a landscape of large olive groves and mountain areas. Part of its term is included in the Natural Park of the Sierras de Cazorla, Segura and Las Villas, the largest protected space in Spain: the orographic labyrinth of valleys, calares, tachos, mountains and altiplanos of great hydrological importance (because of the large amount of rivers and streams that they handle); botany (lario pine, carrasco pine, black pine and many endemic species); faunistico-cynetic and landscape.

From all of which it follows that it is one of the most visited and frequented natural spaces in the country. In its term is the Embalse del Tranco de Beas, one of the most beautiful places in the entire Park. The urban core has a quiet, white and harmonious aspect, in which elements such as the Convent of the Carmelites, the Mocchio Bridge, the Parish of Our Lady of the Assumption and the Palace of the Sandovales stand out.

Few villas may presume to have been a source of poetic inspiration from some of the most universal literates. St. Teresa of Jesus, St. John of the Cross or Francis of Quevedo were captivated by the places they found in Beas de Segura, the main population core of the Sierra de Segura, with a strategic location and a legacy full of history.

The municipality also belongs to the pedanias of Cañada Catena, Cuevas de Ambrosio, Cazona, Los Santiagos, Cortijo de las Piedras and Prados de Armijo among others. Arroyo del Ojanco also belonged to Beas de Segura, until its segregation in 2001.

It is the most inhabited municipality of the Sierra de Segura region, also one of the entrance doors to the Natural Park on the road A-314 (Segura-Cortijos Nuevos), once the National 322 (Crta. Cordoba-Valencia) has been abandoned.

Beas is a bridge that links the Campo de Montiel with the Alto Guadalquivir and forced passage from Baja Andalucía to Levante. Its name comes from the Latin term Veha which means way or way, because it is located at the crossing of three Roman tracks that are headed for the Sierra, the Levante and the County. It's across the Beas River.

It has 35 archaeological sites in its term that give proof of its history. In the urban centre we will find medieval architecture, historical of the late 19th, etc. Beas de Segura also has villages that are a delight for the visitor.

We highlight the following points of interest:

  • The Carmelite Convent.Here was the first foundation of St. Teresa of Jesus in Andalusia in 1575. Three years later, San Juan de la Cruz arrived. A Renaissance style in his church stands out as a major altarpiece.
  • Mocchio Bridge.Located on the Guadalimar River, this bridge that belonged to the new Via Augusta, is made of limestone masonry. Paleolithic materials have been found nearby. Divide Beas from the neighbor Chiclana de Segura.
  • Church of the Assumption.It is of medieval origin, but was rebuilt in 1825 after the burning it suffered years earlier. In the 14th century the chapel was built where the gentlemen who made the incursion into the Nazarite territory of Granada were buried.
  • Uceda Street.The historical architecture representative of the 19th century is altered in this way with neo-Arab elements with classical and Renaissance lexicographs. To highlight another house with califal references with horseshoe arches and scones.

 

Naturaleza

In its municipal term the traveller is surprised with a landscape of valleys and mountains surrounded by a true sea of olive trees. The orography of the term is very rugged by the countless valleys and mountains that settle. Mountains such as Pico Corencia, Eagle Stone, Cerro de la Hoyera or Las Zanjas, with heights above 1,000 meters, and places such as the Water Cave (very close to the village and divided into two orchards communicated by a small but deep lake).

The areas of the Soto, Palananas, Buenamar, Aceres, Buzo de la Nieve or Fuente Pinilla are also important and deserve the attention of nature lovers and hiking. No less suggestive is the Mirador de las Maravillas, in the direction of the village of Cañada Catena, a limestone escarpe over the valley of the Beas River that gives name to the cortijo, used as rural accommodation.

Another of the attractions of the municipality is the aerodrome of El Cornicabral, located in the N-322, about five kilometres from the city centre of Beas. It has two cross-tracks of 1,500 and 700 metres long, two hangars for 800 and 600 square metres aircraft and free camping area with service building.

 

Fiestas y Eventos

On January 23, the eve of the day of Our Lady of Peace where the lumbres burn in all the corners of the town while tasting typical products. After Holy Week The big local party is taking place. From 22 to 25 April the parties of San Marcos that bring together thousands of people from the most diverse backgrounds around the running of bravas, soaked in the streets of the town.

Although the first skirmishes, for the younger ones, begin on the afternoon of the 23rd, the adrenaline is fired when, one after another, the reses are jumping into the sand. Bulls and cows, between clouds of dust and screams of the spectators to see almost the hundred that, during the afternoon of the 24 and all the day 25, will walk the streets led by squadrons to care for and guide them with a rope of between 10 and 25 meters. After the summer period with the festivities of its different villages already held, ends the festive cycle with the fair and parties from 17 to 20 September in honor of the Our Lady of Peace.
 

Gastronomía

Beas was always a land of passage for the transhuman pastors who crossed the manchegan lands looking for the pastures of the south for their cattle.

The fruit of this pastoral heritage, in Beas, the pastoralist cakes, made of flour, water and salt and amassed in a curted sheep or goat skin that the pastor carried on his journey, have been preserved. These cakes are the basis of other masses that are incorporated into the peas, such as the andrajos or galians, where the mass is cooked next to the hunting meat and sometimes with pieces of cod.

To highlight also the Easter bannazos, with several eggs cooked.
 

Historia

Beas de Segura is a villa full of history. Their occupation is documented from the Lower Paleolithic. It was in Roman times that Beas was consolidated as an urban core. From that time there are many tracks, such as villas, streets or the emblematic Mocho Bridge.

During the Islamic period, the stage of the highest splendor of Beas was reached in the time of Abdeleran III where it was part of the great district of the Alpujarra and Elvira. From that time it was its fortified enclosure, now already missing. Fernando III conquered Beas between 1224 and 1227 by joining her in the Crown of Castile, giving as an award to his Chancellor Don Juan, Bishop of Osma, the castle and the Villa of Beas, and this in turn the exchange with the Master of Santiago in exchange for inheritance. The title of Villa and other privileges received it in 1239, and in the 16th century, according to the Topographic Relations of Philip II, Beas appears as a flourishing economic center in the area of Segura, with a strong agricultural activity.

After the Reconquista was first included in the territorial demarcation of Toledo and within the Order of Santiago's Order, then passed to the Dependence of the Governor of Segura. Thus he was part of the Segura Common and all his territory was governed by the Ordinances. It was a crossroads of roads, hence its primitive name of Veha (way or way). Here are the three Roman tracks that were heading for the mountains, the Levante and El Condado.

At present, Beas is one of the main economic centres of the Sierra de Segura, whose region presupposes pride despite the fact that in the past it did not belong to the Segura Encomandación. Through the Beas River, the town is on horseback between the Sierra de Segura and the lands of El Condado and Sierra Morena. Beas de Segura offers the traveller a legacy impregnated in history, as demonstrated by the 35 archaeological sites located in its term.

The oldest pieces, including those of the Mocchio Bridge, are preserved in the archaeological section of the Provincial Museum. Beas is one of the doors of the Natural Park of the Sierras de Cazorla, Segura and Las Villas and an excellent starting point for entering the interior of these majestic lands.

Before, the traveller can walk his urban town, between narrow and tortuous streets that bear witness to a rich medieval and historical architecture of the late 19th century, such as Ángel Uceda Street and the building of the Old Carniceria. However, his main monumental claim is the Convent of the Descalzas Carmelites, which Saint Teresa of Jesus founded in houses owned by Catherine Maria de Sandoval and Godínez.

In a Renaissance style, the convent has a baroque cover and is structured with the classic half-point arch on imposts, with mensula in the key and rosettes. On the friso with triglyphs there is a split fronton and shields that frame the pilasters and bake with San José and El Niño. On the niche, the shield of the Order. A large triangular front and pinnacles kill the facade.

An appeal that captivated the greatest mystic poets: Santa Teresa, for whom this land was "most delightful and of a fine climate," and San Juan de la Cruz, who was constantly travelling to and from Beas from the various places his duties took him. 

The presence in the town of illustrious figures such as Santa Teresa de Jesús, San Juan de la Cruz and Ana de Jesús reinforces Beas's importance in the reform of the Carmelite Order.
